I am wondering, remember how apps needed to have a beginning image that was usually called the Loading page and it would say something like "Book is loading..." Do we still need a loading page graphic?

Yes we still need a Loading Page that we will ask for during the publish process.

I have a Loading page image ready. Do I include it as the first page in my app that I am building in the Builder?

No don't include it as a first page, when you will send the app to us to publish, then you will include loading image to for the loading page.
